Heat oven to 350 degrees
Grease / Line baking sheets with parchment paper.
1 ½ cups Pumpkin
½ cup butter, softened
1 cup white sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
¾ cup shortening
1 ½ cup sugar
2 teaspoons vanilla extract
½ cup prepared vanilla pudding

1. Cream the butter with the sugar. Beat in the pumpkin, egg, and vanilla.
2. Combine the dry ingredients (flour baking powder, baking soda, salt, and cinnamon)
3. Stir the dry ingredient mixture into the pumpkin / egg mixture.
4. Using a teaspoon, drop dough onto a prepared baking sheet..
5. Place all ingredients (except flour) into mixing bowl. Using dough beaters, begin mixing ingredients. Add flour 1 cup at a time
6. Bake at 350 degrees for 12 – 14 minutes.
8. Cool completely before making “sandwiches”


Beat the shortening and 1 ½ cups sugar together for 10 minutes. Beat in the vanilla and the vanilla pudding. Beat until creamy.
